Wednesday is probably the best day of the work week because in addtion to being the mid-point, it also has an N-E-S in the middle. Nintendo Entertainment System, of course!
So, tonight, in honor of Wednesdays everywhere, I made some yummy creamy comfort food–without the cream–and it was so good that I had to share the love.
Creamy Vegan Bowties
1 cup plain Silk soymilk
¾ cup frozen white corn kernnels
3 cups bowtie pasta (already cooked)
2 tbsp nutritional yeast
3 tbsp tahini
¼ tsp lemon juice
¼ tsp garlic powder
¼ tsp salt (add more or less to taste)
Morningstar Farms veg Chik’n Strips or other vegan faux meat
Combine soymilk, corn, tahini, nutritional yeast, lemon juice, garlic powder, and salt in a sauce pan. Bring to a boil then remove from heat. Next puree this mixture until smooth. Add mixture back into the pan and bring to a boil again. Reduce heat to a simmer and stir frequently for 5 min. Sauce will get bubbly and thick. Add more salt to taste if needed. Pour this mixture over the bowties and mix until evenly coated. Top with fresh cracked black pepper and crusty bread
*you can also add in any faux meat you like.
